Chef Tamang is showcasing his culinary expertise in Asian cuisine as part of the ongoing food festival ‘Wok Wonders’ at Comida, DoubleTree by Hilton, Panaji

The quiet ambience at the restaurant Comida was perfect for retiring after a hectic day for me and my family. Indeed, ‘Wok Wonders’, which has a menu curated by chef Tamang gave the required spice, in the amounts our hungry souls needed that day.

Having travelled across many Asian countries, chef Tamang has brought the flavours together of all these places in a wonderful fusion featuring flavours from Chinese, Japanese, Thai, Indian, and Korean cuisines.

“We didn’t have any Asian restaurant in the hotel and we wanted to enhance our Asian food here. We wanted our chefs to be trained under chef Tamang, so we invited him from Mumbai,” says executive sous chef, DoubleTree Hilton, Panaji Ritesh Raje. “These dishes are only there for a particular time period, but gradually we will start including some of the dishes in the A la Carte menu as well.”

We decided to go with the chef-recommended dishes. Among these, the Signature Baked Miso Black Code, served with crisp ginger on top was so soft, that it melted in the mouth. The Crispy Prawns with Burnt Garlic and Almond Flakes was another mouth-watering dish. The Stir Fry French Beans with Mock Chicken was another highlight. The mock chicken portion tasted exactly like chicken, but the chef informed us that it was in fact soyabean.

Other dishes on the menu include Whole Crab Singaporean Chili Sauce, Whole Lobster with Noodles, Prawns Chili Oil and Spring Onion, Grilled New Zealand Lamb Chops, Sweet and Sour Chicken, Malaysian Fish Curry, Sichuan Mapo Tofu with preserved vegetables and chopped shiitake mushrooms, Spicy Korean Noodles, Edamame Japanese Blue Butter Fried Rice, and five-spice infused Caramel Custard.

The food at the ongoing Wok Wonders fest is perfect for foodies who may want to taste a bit of Japanese, Chinese, Korean and Indian but not travel at once to all places. Given the varieties of dishes to try from in the menu, there is something for every taste palate. Indeed, this is a dining experience where every dish tells a story of tradition, craftsmanship, and flavour.

(The fest is on till February 23 from 7 p.m. to 10.30 p.m.)
